Recipe: popchips crusted chicken

As I mentioned a couple weeks ago, Chris and I joined a gym in our new town and have been consistently going for three weeks now. I will be the first to admit that we don't eat healthy, we eat delicious. But, since we are putting all this effort into working out, and the fact that we are getting older and that ice cream every night is catching up, it is time we start making better choices when it comes to food.

You all know the three things I refuse to give up. I have said them (many times!) before, but I'll say them again: cereal, ice cream, and chips. Oh chips, I could eat you all day, everyday.

Since I will never give up my love for chips, I decided to incorporate them into our meals. I have been buying a lot of chicken and trying different ways to mix it up. That is where my idea for popchips crusted chicken came into play.  

Instead of eating the entire bag (literally), this time I decided to use the popchips as the crust on my baked chicken. It was love at first bite!

You will need:

- 1 package of thin sliced chicken breasts
- 3/4 bag of popchips (I used the barbeque potato flavor, yum!)
- 1 egg 
- 2 tablespoons of flour

Preheat oven to 400 degrees. In one bowl, whisk egg. In a separate bowl, crunch popchips and combine with flour. Dip chicken breast in egg and then coat in popchips and flour mixture. Place in baking dish. Cook 20-25 minutes at 400 degrees.

I can't wait to mix up this recipe with all the other popchips flavors! Now eating healthy can be delicious, too!
